Who we are
Island Cart Co. came together during a pause in real life.
We packed up our Vancouver home, put everything into storage, and took a six month sabbatical with our two young kids. With a move to Nanoose Bay ahead of us, we found ourselves talking a lot about what we wanted next and how to build something that fit a slower island pace and more time together.
I’m Rachelle. I’ve been running Beyond Nourished, a private chef and food services business on the mainland, since 2012. With an incredible team holding things down while I was away, I finally had space to start something new. I never wanted to be a traditional caterer, but I did want to stay in my lane and use what I know in a way that felt fresh and fun.
I grew up around weddings and events. My mom and grandmother were both florists, so celebrations were part of everyday life and explain my attention to food, design, and details. When the idea for a grazing cart came up and Ben was in, I went all in. Most of Island Cart Co. came together in about three days. My family thought I’d lost it, but once I’m excited about an idea, I don’t really do slow.
Ben comes from a completely different world. He spent most of his career working as a driller and around heavy machinery. What he brings is calm. He’s rarely stressed, always early, happy to lift the heavy things, and somehow keeps things light. It balances my high energy, detail driven nature, and together it works.
Island Cart Co. brings together good food, thoughtful design, and celebrations that feel easy and well done.
We’ll be settling into island life in early 2026 and are now accepting bookings beginning May 2026 as we put the final touches on our carts.
